We produce high quality fresh pasta for top restaurants in NYC and Brooklyn. Brooklyn Pasta Lab is owned and operated by Michael Pini who has been a chef in NYC for over 15 years with experience in 1, 2 and 3 Michelin starred restaurants.
Job Title: Director of Pasta Production
Brooklyn Pasta Lab is a fast-growing fresh pasta company serving some of NYC’s best restaurants. We focus on quality, consistency, and great relationships. We’re looking for a hands-on, reliable, and organized leader to take charge of our production kitchen and help us scale operations.
Position Summary:
The Director of Pasta Production will oversee daily pasta production, manage the kitchen team, maintain quality and food safety standards, and ensure orders are completed accurately and on time. This is a key leadership role with room to grow as the company expands.
Key Responsibilities:
- Manage and participate in daily fresh pasta production (mixing, extruding, shaping, packing)
- Create and execute daily/weekly production schedules based on client orders
- Lead, train, and supervise a small production team
- Track and organize raw material and packaging inventory
- Maintain a clean, organized, and food-safe production facility
- Troubleshoot equipment or escalate issues as needed
- Communicate with the owners and (occasionally) with clients about orders
- Help improve systems for scaling up production
Requirements:
- 2–5+ years of experience in a commercial kitchen or food production setting
- Strong leadership and time management skills
- Very detail-oriented and process-driven
- Reliable, punctual, and clear communicator
- Ability to lift 50 lbs and work on your feet in a production environment
- Experience with pasta is a plus but not required
- Spanish-speaking is a plus
Job Details:
- Schedule: Monday–Friday, ~7 AM to 4 PM
- Location: Brooklyn, NY (in-person only)
- Compensation: Competitive, based on experience
- Start Date: ASAP

Preferred Qualifications:
- Culinary school education or relevant certifications.
- Familiarity with Italian cuisine and pasta-making traditions.
- Experience with various pasta-making equipment and tools.
Working Conditions:
This role is in a commercial kitchen environment. The position involves working early morning to early evenings.
